Upcoming "Start-up breakfast" session on February 16

The next Start-up breakfast will be held on Thursday, February 16, 2023, at 9.00am at Room 11, Pavillon Émile Roux (PER) 2nd floor with Dr Romain Chayotas, Co-founder & Managing Director at Standing Ovation, and Head of Metabolic Engineering Department at Global Bioenergies as guest.

Standing Ovation developed an animal-free dairy cheese with reproduced casein, the main protein that makes up cow’s milk. Romain, one of the brilliant Pasteur alumni will present us with their innovative cheese from the meeting with science and traditional cheese making.  And he will share his unique journey of startup creation and management, as well.

Romain studied and earned an engineering degree in Agronomy at L’Institut Agro Montpellier. In 2005, he received his Master's degree in Cellular Biology from Pierre and Marie Curie University. He got his Ph.D. in Molecular biology and Microbiology from the same university and Institut Pasteur in 2009. Right after his Ph.D., he joined Global Bioenergies as a Head of the Metabolic Engineering Department, Project Leader strains construction and fermentation, and Project Leader strains construction and genetic screening. In 2020, he became a Co-founder and Managing Director at Standing Ovation. He is still working at Global Bioenergies as the Head of the Metabolic Engineering Department.

Standing Ovation has just completed a series fundraising of 12 million euros, led by its shareholder Astanor Ventures. In November 2022, the company signed a strategic partnership with Bel Group, the well-known French cheese company. Standing Ovation's scientific teams will work closely with Bel's R&D center in Vendôme to apply its technology to selected Bel products.
